Fiber-enriched drinks based on apple juice and/or alcohol-free cider

Applied research project 616224790131 "Development of production technology for fiber-enriched drinks based on apple juice and/or alcohol-free cider and investigation of the stability of added fibers in fruit juice drinks with different acidity during the desired shelf life" is co-financed by the EAFRD fund under measure 16.2 of the RDP. The objective of the project is to develop production technology for apple juice-based drinks with a diverse fiber profile and to investigate the stability of added fibers in drinks with different acidity during their shelf life. In the development of fiber-enriched drink technology, it is important to determine the solubility and stability of potential fibers at different pH levels and temperatures. The base raw materials for this project are the company's apple juices and alcohol-free ciders. The project aims to expand the company's product range, which is achieved by increasing added value through the addition of fibers to products. The new products are fiber-enriched drinks, in the production of which apple juice and alcohol-free cider derived from it have been valorized. With this project, we aim to demonstrate the capability born from the cooperation between modern food industry and academic research institutions to create innovative and higher added-value products with great market potential. This will also raise the average salaries of sector employees in regions further away from the capital. The project results will enable the expansion of production and an increase in sector employment.
